Avocado Pesto Pasta

PREP TIME 15 minutes  |   TOTAL TIME 25 minutes

​Ingredients

  • 2-3 Stems of Fresh Basil (add more to taste)

  • 1/4 Bunch of Parsley

  • 1 Avocado

  • 2 tbsp Nutritional Yeast

  • 3 Cloves of Garlic

  • 1 Lemon 

  • 1/2 tsp Salt

  • 1/4 tsp Black Pepper

  • 1 tbsp of Olive Oil

Directions (Makes 4-5 bowls of pasta)

  • Make Pesto combing Basil, Parsley, Avocado, Nutritional Yeast, Garlic, Lemon Juice, Salt, Pepper and Olive Oil in Cuisinart and blend until creamy smooth

  • Bring Pot of Water to boil and add 1 pound of Penne or Rigatoni Pasta to boiling water, cook pasta until al dente

  • Drain pasta and return to pot and mix in Pesto

  • Serve our Healthy Pesto Pasta in bowls and garnish with red pepper or parmesan cheese (daiya cheese for Vegans)
