Avocado Pesto Pasta
PREP TIME 15 minutes | TOTAL TIME 25 minutes
Ingredients

2-3 Stems of Fresh Basil (add more to taste)

1/4 Bunch of Parsley

1 Avocado
-
2 tbsp Nutritional Yeast
-
3 Cloves of Garlic
-
1 Lemon
-
1/2 tsp Salt
-
1/4 tsp Black Pepper
-
1 tbsp of Olive Oil
Directions (Makes 4-5 bowls of pasta)

Make Pesto combing Basil, Parsley, Avocado, Nutritional Yeast, Garlic, Lemon Juice, Salt, Pepper and Olive Oil in Cuisinart and blend until creamy smooth

Bring Pot of Water to boil and add 1 pound of Penne or Rigatoni Pasta to boiling water, cook pasta until al dente

Drain pasta and return to pot and mix in Pesto

Serve our Healthy Pesto Pasta in bowls and garnish with red pepper or parmesan cheese (daiya cheese for Vegans)
