Banana Bread

PREP TIME 10 minutes  |   TOTAL TIME 50 minutes

​Ingredients

  • 3 Medium Bananas

  • 1/4 Cup Almond Butter

  • 1 Tsp Vanilla Extract

  • 2 Eggs (for Vegans use Just Eggs substitute)

  • 1/2 Coconut Flour

  • 3/4 Tsp Baking Soda

  • 1/4 Tsp Sea Salt

  • 1/2 Tsp Cinnamon

  • 2 Tsp Cacao Powder (Navitas)

  • 1/2 Cup Dark Chocolate Chips (Enjoy Life)

Directions

  • Preheat oven to 350 degrees

  • In a large bowl blend Bananas, Almond Butter and Vanilla Extract until smooth

  • Add two Eggs and blend into mix thoroughly

  • Add Coconut Flour, Baking Soda, Sea Salt, Cacao Powder and Cinnamon and blend until all ingredients are mixed in well

  • Add 3/4 of the Dark Chocolate Chips and mix in with spoon

  • Line a bread pan with parchment paper and spray lightly with Coconut Oil

  • Add banana bread mix to the pan smoothing the mixture out evenly

  • Sprinkle remaining Chocolate Chips over the top of the mix

  • Bake in the oven for 35-40 minutes and it should be ready to eat after it cools for 5-10 minutes
