Vegan Chili

PREP TIME 30 minutes | TOTAL TIME 75-90 minutes
Ingredients

1 Medium Onion
-
1 Green Pepper
-
2 Cloves of Garlic
-
1/2 Jalapeño Pepper
-
Lightlife Smart Ground (Meatless Crumbles)
-
1 Can Muir Glen Diced Tomatoes
-
1 Can Organic Chili Beans
-
2 Tbsp Chili Powder
-
1/4 tsp Black Pepper
-
1/2 tsp Sea Salt
-
1-2 Tbsp Olive Oil
-
Mexican Cheese (or Daiya Shredded Cheddar for Vegans)
Directions (Makes 8 Bowls)

Mince Garlic, chop up Onions, Green Pepper and Jalapeño Pepper

Add Garlic and Olive Oil to Pot and cook until slight golden brown

Add Onions, Green Pepper and Jalapeño Pepper to pot and cook for 5-10 minutes

In a separate frying pan add Olive Oil and Smart Ground and cook 5-10 minutes until ground meat starts to brown

Add Tomatoes, Chili Beans and Ground Meat to Pan with Garlic, Onions and Peppers

Sprinkle 1 Tbsp of Chili Powder, Black Pepper and Sea Salt and cook on low to medium heat for 60-75 minutes, after the Chili has cooked add 1 more Tbsp of Chili Powder

Separately cook 1 to 1 1/2 cups of Rice in a pan with 2-3 cups of water, cook for 25 minutes or until the rice is al dente

Serve by adding rice to a bowl, adding Chili to the top and sprinkling Mexican Cheese or Daiya Cheese over the Chili
