Chipotle Coleslaw

PREP TIME 20 minutes  |   TOTAL TIME 20 minutes

​Ingredients​​

  • 1/2 Red Cabbage (or 14oz package of cabbage)

  • 1 Medium Carrot

  • 3-4 Green Onions

  • Dressing

    • 1/2 Cup Mayo (or Vegan mayo)

    • 1 Lime

    • 1 Chipotle Pepper

    • 1 Tsp Mexican Seasoning

    • 1 Tsp Apple Cider Vinegar

    • 1/2 Tsp Sea Salt

    • 1/4 Tsp Black Pepper

    • 1/4 Cup Cilantro

    • 1/2 Tsp Monk Fruit Sweetener

Directions (4-6 servings)

  • Cut cabbage into thin slices or use packaged cabbage and add to a large bowl

  • Use julienne slicer to dice up carrot and add to bowl

  • Cut green onions into thin slices and add to bowl

  • Mix up cabbage, carrots and green onions

  • Finely cut up chipotle pepper and set aside into a small bowl

  • Chop up cilantro into very fine pieces and set aside into a small bowl

  • Chipotle Dressing

    • Add mayo, lime, Mexican seasoning, vinegar, salt, pepper, ​monk fruit sweetener, cilantro and chipotle pepper into a bowl and whisk together until creamy smooth

  • Mix chipotle dressing into the large bowl with the cabbage, carrots and onions until thoroughly mixed up

  • Serve the coleslaw as a side dish or add to tacos as a topping
