Chipotle Tofu Wrap

PREP TIME 20 minutes  |   TOTAL TIME 25 minutes

​Ingredients

  • 1 Red/Yellow Pepper

  • 2-3 Slices of Red Onion

  • 1/2 Container of Firm Tofu 

  • 1/4 Medium Salsa

  • 1/2 tsp Cumin

  • 1/2 tsp Chipotle 

  • Guacamole 

  • Sour Cream (Tofutti Sour Cream for Vegans)

  • Cheddar Cheese (Daiya for Vegans)

Directions (Makes 3-4 wraps)

  • Cut up Pepper and Onion into thin slices and cook until slightly browned about 10 minutes, after 5 minutes of cooking add Cumin and Chipotle spices.

  • Thinly slice Tofu into 1/4" slices and then cut into squares and add to mix and cook an additional 5 minutes.

  • Add Medium Salsa to the mix and cook 2-3 minutes and then you are ready to serve.

  • Heat oven to 375 degrees and put wraps in for 5 minutes

  • For each wrap add mix above, plus top with Guacamole, Sour Cream and Cheddar Cheese and serve.
