Vegan Chocolate Pie

PREP TIME 30 minutes  |   TOTAL TIME 2 1/2 - 3 hours

Ingredients

  • 1 1/2 Cups of walnuts

  • 1 Heaping cup of dates

  • 1/3 Cup of cacao powder

  • 1 Container of Nasoya silken tofu

  • 1/2 Cup of Soy Delicious coconut milk

  • 8oz of Enjoy Life chocolate chips

Directions 

  • Soaks 1 cup of dates in warm water for 15-20 minutes

  • Add  walnuts and cacao powder to Cuisinart and blend until walnuts and cacao are a fine powder, take out of Cuisinart and set aside

  • Add Dates to Cuisinart and blend the dates into small pieces

  • Combine the dates with walnut/cacao powder mix and blend thoroughly

  • Take a pie pan and spray with coconut oil then take dates, walnut and cacao powder mixture and transfer to pie pan, spread in the pie pan with your fingers until it forms a crust in the pan

  • Put pie pan in freezer for about 30-45 minutes so the crust sets

  • Add Chocolate chips to bowl and put it in the microwave until chocolate is thoroughly melted

  • Add coconut milk, silken tofu and heated chocolate to Vitamix/blender and blend until creamy smooth

  • Take pie pan out of freezer and pour Vitamix chocolate filling into the pie pan

  • Put the pie pan back into the freezer for approximately 2 hours

  • Chocolate Pie is ready to serve, you can optionally add whipped cream for topping, enjoy this delicious dessert
