Healthy Omelet

PREP TIME 10 minutes  |   TOTAL TIME 10 minutes

​Ingredients

  • 2 Eggs

  • 1 Tbsp Olive Oil

  • 1/4 Red Pepper

  • 2 Slices Red Onion

  • 1/2 Cup Spinach

  • 1 Tbsp Nutritional Yeast

  • Dash Himalayan Salt

  • 1 slice of Jalapeno Pepper (optional)

Directions

  • Finely chop 1/4 of Red Pepper

  • Finely chop a slice or two of Red Onion 

  • Dice up Spinach

  • Cut up a slice or two of Jalapeno Pepper  (optional)

  • Add Olive Oil to frying pan on low heat

  • Cook Red Peppers and Onion for 3-5 minutes (optionally add Jalapeno pepper)

  • Add Spinach and cook for another 2-3 minutes

  • Take peppers, onions and spinach and set aside in a bowl

  • Add Olive Oil to pan again and then add the 2 eggs, cooking on low heat until eggs start to solidify

  • Add Peppers, Onions and Spinach mix to one side of the omelet

  • Add Nutritional Yeast and Himalayan Salt to the opposite side

  • Flip omelet in half and serve
