Healthy Omelet
PREP TIME 10 minutes | TOTAL TIME 10 minutes
Ingredients

2 Eggs
-
1 Tbsp Olive Oil
-
1/4 Red Pepper
-
2 Slices Red Onion
-
1/2 Cup Spinach
-
1 Tbsp Nutritional Yeast
-
Dash Himalayan Salt
-
1 slice of Jalapeno Pepper (optional)
Directions

Finely chop 1/4 of Red Pepper
-
Finely chop a slice or two of Red Onion
-
Dice up Spinach
-
Cut up a slice or two of Jalapeno Pepper (optional)

Add Olive Oil to frying pan on low heat

Cook Red Peppers and Onion for 3-5 minutes (optionally add Jalapeno pepper)

Add Spinach and cook for another 2-3 minutes

Take peppers, onions and spinach and set aside in a bowl
-
Add Olive Oil to pan again and then add the 2 eggs, cooking on low heat until eggs start to solidify
-
Add Peppers, Onions and Spinach mix to one side of the omelet
-
Add Nutritional Yeast and Himalayan Salt to the opposite side
-
Flip omelet in half and serve
