Kale, Almonds, Strawberries & Lemon Vinaigrette Salad
PREP TIME 20 minutes | TOTAL TIME 20 minutes
Ingredients

1 Bunch of Baby Kale
-
1/4 cup of almonds
-
5-6 strawberries
-
1 lemon
-
2 tbsp olive oil
-
1/8 tsp pepper
-
1 dash of sea salt
-
1/3 - 1/4 cup of yogurt (or vegan yogurt substitute)
Directions (Makes 4 Bowls)

Thoroughly wash bunch of baby kale, cutting off stems and set aside

Take 1/4 cup of almond and bake at 425 degrees for 3-5 minutes until golden brown

Slice 5-6 strawberries into this slices

Lemon vinaigrette dressing
-
Take 1 lemon and zest the entire lemon

Squeeze lemon juice from lemon into a small cup

In dressing jar add oil olive, lemon juice, lemon zest, yogurt, pepper and sea salt

In a large bowl add kale, 1/2 of the almonds and lemon vinaigrette, mix together thoroughly, then top with strawberries and remaining almonds
