Kale, Almonds, Strawberries &  Lemon Vinaigrette Salad

PREP TIME 20 minutes  |   TOTAL TIME 20 minutes

​Ingredients

  • 1 Bunch of Baby Kale

  • 1/4 cup of almonds

  • 5-6 strawberries

  • 1 lemon

  • 2 tbsp olive oil

  • 1/8 tsp pepper

  • 1 dash of sea salt

  • 1/3 - 1/4 cup of yogurt (or vegan yogurt substitute)

Directions (Makes 4 Bowls)

  • Thoroughly wash bunch of baby kale, cutting off stems and set aside

  • Take 1/4 cup of almond and bake at 425 degrees for 3-5 minutes until golden brown

  • Slice 5-6 strawberries into this slices

  • Lemon vinaigrette dressing

    • Take 1 lemon and zest the entire lemon​

    • Squeeze lemon juice from lemon into a small cup

    • In dressing jar add oil olive, lemon juice, lemon zest, yogurt, pepper and sea salt

  • In a large bowl add kale, 1/2 of the almonds and lemon vinaigrette, mix together thoroughly, then top with strawberries and  remaining almonds
