Mediterranean Bowl
PREP TIME 25 minutes | TOTAL TIME 25 minutes
Ingredients

1 Medium Cucumber
-
15-20 Grape Tomatoes
-
1-2 Slices of Red Onion
-
1 Can of Chickpeas
-
16-24 Kalamata Oliives
-
1 Container Cedar Hummus Original (or other Hummus)

10-12 Falafels
-
1/2 Cup Quinoa
-
1/8 tsp Freshly Ground Black Pepper
-
1/4 tsp Sea Salt
-
1 tsp Olive Oil
-
Small bunch of Parsley
-
1-2 Pieces Naan Bread
Directions (Makes 4 Bowls)

Finely cut the Cucumber into a bowl

Slice Grape Tomatoes and add to the bowl with the cucumber

Cut Red Onion and add to mix of Cucumbers and Tomatoes

Finely chop Parsley and add to the mix.

Add Olive Oil and Sea Salt to bowl with the other ingredients and mix well

Prepare a bowl with Quinoa in the bottom, add Cucumber, Tomatoes, Red Onion and Parsley mixture to the bowl, along with 7-8 Olives, 2-3 Falafels, 2 Tablespoons of Hummus, 1/3 of a cup of Chickpeas and 2-3 pieces of Naan Bread, lightly sprinkle Ground Pepper.

Prepare 3-4 bowls and serve!
