Mediterranean Bowl

PREP TIME 25 minutes  |   TOTAL TIME 25 minutes

Ingredients

  • 1 Medium Cucumber

  • 15-20 Grape Tomatoes

  • 1-2 Slices of Red Onion

  • 1 Can of Chickpeas

  • 16-24 Kalamata Oliives

  • 1 Container Cedar Hummus Original (or other Hummus)

  • 10-12 Falafels

  • 1/2  Cup Quinoa

  • 1/8 tsp Freshly Ground Black Pepper

  • 1/4 tsp Sea Salt

  • 1 tsp Olive Oil

  • Small bunch of Parsley

  • 1-2 Pieces Naan Bread

Directions (Makes 4 Bowls)

  • Finely cut the Cucumber into a bowl

  • Slice Grape Tomatoes and add to the bowl with the cucumber

  • Cut Red Onion and add to mix of Cucumbers and Tomatoes

  • Finely chop Parsley and add to the mix.

  • Add Olive Oil and Sea Salt to bowl with the other ingredients and mix well

  • Prepare a bowl with Quinoa in the bottom, add Cucumber, Tomatoes, Red Onion and Parsley mixture to the bowl, along with 7-8 Olives, 2-3 Falafels, 2 Tablespoons of Hummus, 1/3 of a cup of Chickpeas and 2-3 pieces of Naan Bread, lightly sprinkle Ground Pepper. 

  • Prepare 3-4 bowls and serve!
