Minestrone Soup

PREP TIME 30 minutes  |   TOTAL TIME 90 minutes

​Ingredients

  • 1 Medium Onion

  • 1 Celery Stalk

  • 2 Medium Carrots

  • 1 28oz Can Muir Glen Tomatoes

  • 1 Can Cannellini Beans

  • 4-6 Cups Vegetable Broth

  • 1 tsp Thyme

  • 1/2 tsp Herbs de Provence

  • 1 tsp Sea Salt

  • 1/4 tsp Black Pepper

  • 1 Zucchini

  • 1 Cup Chopped Spinach

  • 1/2 - 3/4 Cup of Ditalini pasta

Directions (Makes 6-8 Bowls)

  • Dice Onion into fine pieces, cut Celery and Carrots into thin slices.

  • Add Vegetable Broth (4 cups), Onions, Celery, Carrots, canned Tomatoes, Cannellini Beans to a pot.

  • Add in spices Thyme, Herbs de Provence, Sea Salt and Pepper and cook everything for 1 hour.

  • Finely cut up Spinach and peel and slice Zucchini into thin pieces and then into quarters.

  • After 1 hour add Spinach and Zucchini to soup and cook for 15 minutes.

  • Add 2 more cups of Vegetable Broth and bring to boil and add Ditalini pasta.

  • Cook until pasta is al dente and serve.
