Minestrone Soup
PREP TIME 30 minutes | TOTAL TIME 90 minutes
Ingredients

1 Medium Onion
-
1 Celery Stalk
-
2 Medium Carrots
-
1 28oz Can Muir Glen Tomatoes

1 Can Cannellini Beans
-
4-6 Cups Vegetable Broth
-
1 tsp Thyme
-
1/2 tsp Herbs de Provence
-
1 tsp Sea Salt
-
1/4 tsp Black Pepper
-
1 Zucchini
-
1 Cup Chopped Spinach
-
1/2 - 3/4 Cup of Ditalini pasta
Directions (Makes 6-8 Bowls)

Dice Onion into fine pieces, cut Celery and Carrots into thin slices.

Add Vegetable Broth (4 cups), Onions, Celery, Carrots, canned Tomatoes, Cannellini Beans to a pot.

Add in spices Thyme, Herbs de Provence, Sea Salt and Pepper and cook everything for 1 hour.

Finely cut up Spinach and peel and slice Zucchini into thin pieces and then into quarters.

After 1 hour add Spinach and Zucchini to soup and cook for 15 minutes.

Add 2 more cups of Vegetable Broth and bring to boil and add Ditalini pasta.

Cook until pasta is al dente and serve.
