Pasta Fagioli
PREP TIME 20 minutes | TOTAL TIME 35-40 minutes
Ingredients

2-3 Cloves of Garlic

1 Small Onion
-
1 Green Pepper
-
2 tbsp Olive Oil
-
1 14.5oz Can Muir Glen Diced Tomatoes

1 15oz Can Navy Beans
-
1 tsp Italian Seasoning
-
1/2 tsp Oregano
-
1/2 tsp Sea Salt
-
1/4 tsp Black Pepper
-
1/4 tsp Red Pepper Flakes / Parmesan Cheese for garnish (skip cheese for vegans)

1 tsp Parsley

1/4 - 1/2 lb Ditalini Pasta
Directions (Makes 5-6 bowls of pasta)

Cut up garlic, onion and green pepper

Add olive oil to pan and sauté garlic until lightly golden brown, then add onions and green pepper and cook 3-5 minutes until peppers and onions are slightly soft

Add Diced Tomatoes and Navy Beans and cook together for 15 minutes

Add spices (Italian seasoning, oregano, sea salt, black pepper and parsley) to garlic, onion, green pepper and diced tomatoes mixture continue to simmer

In a separate pan cook ditalini pasta until it is slightly hard then add pasta to other pan, keep some water with the pasta when mixing together, cook until pasta is al dente

Serve pasta and garnish with Parmesan cheese or red pepper flakes
