Crumbly Pumpkin Bread

PREP TIME 10 minutes  |   TOTAL TIME 50 minutes

​Ingredients

  • 1/2 Cup Coconut Oil

  • 1/2 Cup Maple Syrup

  • 2 Eggs (Vegans use Just Egg substitute)

  • 1/2 Can of Pumpkin Puree (14.5 oz)

  • 1 1/2 Tsp Vanilla Extract

  • 3/4 Cup Coconut Flour

  • 3/4 Tsp Baking Soda

  • 1/2 Tsp Baking Powder

  • 1 Tsp Pumpkin Spice

  • 1 1/2 Tsp Cacao Powder

  • 1 1/2 Tsp Cinnamon

Crumb Topping

  • 3 Tbsp Walnuts

  • 2 Tbsp Coconut Oil

  • 2 Tbsp Coconut Flour

  • 2 Tbsp Monk Fruit Sweetener

  • 1/2 Tsp Cinnamon

Directions

  • Preheat oven to 350 degrees

  • Mix together in a large bowl Coconut Oil, Maple Syrup and Eggs, stir thoroughly and then add Pumpkin Puree and Vanilla Extract, again mix ingredients until creamy smooth

  • In another bowl add dry ingredients:  Coconut Flour, Baking Soda, Baking Powder, Pumpkin Spice, Cacao Powder and Cinnamon, mix with fork until everything is mixed well

  • Add dry ingredients to wet mix and blend together, but do not over mix the bread

  • Line a bread pan with parchment paper and spray with Coconut Oil, then add bread mix to pan and spread evenly

  • For the topping, mix together Coconut Oil, Coconut Flour, Monk Fruit Sweetener and Cinnamon, then chop walnuts and add those to the topping and mix again until walnuts are evenly mixed in

  • Add topping mix to the top of the bread, and push the mixture into the bread gently

  • Bake bread in oven for 45-50 minutes, take it out and let the bread cool for 10-15 minutes
