Sweet Potato Bowl

PREP TIME 10 minutes  |   TOTAL TIME 15 minutes

​Ingredients

  • 1/4 cup Pecans

  • 1/4 cup Oats

  • 2 tbsp Maple Syrup

  • 1 tsp Coconut Oil

  • 1 Sweet Potato or Yam

  • 1/2 Banana

  • 1 to 1 1/2 cups Mango (or frozen)

  • 1/4 tsp Nutmeg

  • 1/4 tsp Cinnamon

  • 1 tsp Vanilla Extract

  • 1/2 cup Unsweetened Coconut Milk

Directions

  • Finely chop Pecans and add to bowl, then combine Oats, Maple Syrup and Coconut Oil and mix thoroughly.

  • Heat oven to 375 degrees 

  • Put mixture on cooking sheet with parchment paper and cook for 5 minutes, then flip mixture and cook for 2-3 minutes until golden brown and set aside for topping

  • Cook Sweet Potato / Yam in microwave for 5-6  minutes until soft or cook in oven for 35-40 minutes

  • Peel Sweet Potato and add to Vitamix, then add Banana, Mangos, Cinnamon, Nutmeg, Vanilla Extract and Maple Syrup 

  • Blend in Vitamix 2-3 minutes on high speed until creamy smooth

  • Pour evenly into 2 bowls and add Pecan/Oat topping and Raspberries
