Sweet Potato Bowl
PREP TIME 10 minutes | TOTAL TIME 15 minutes
Ingredients

1/4 cup Pecans
-
1/4 cup Oats
-
2 tbsp Maple Syrup
-
1 tsp Coconut Oil
-
1 Sweet Potato or Yam
-
1/2 Banana
-
1 to 1 1/2 cups Mango (or frozen)

1/4 tsp Nutmeg
-
1/4 tsp Cinnamon
-
1 tsp Vanilla Extract
-
1/2 cup Unsweetened Coconut Milk
Directions

Finely chop Pecans and add to bowl, then combine Oats, Maple Syrup and Coconut Oil and mix thoroughly.

Heat oven to 375 degrees

Put mixture on cooking sheet with parchment paper and cook for 5 minutes, then flip mixture and cook for 2-3 minutes until golden brown and set aside for topping

Cook Sweet Potato / Yam in microwave for 5-6 minutes until soft or cook in oven for 35-40 minutes

Peel Sweet Potato and add to Vitamix, then add Banana, Mangos, Cinnamon, Nutmeg, Vanilla Extract and Maple Syrup

Blend in Vitamix 2-3 minutes on high speed until creamy smooth

Pour evenly into 2 bowls and add Pecan/Oat topping and Raspberries
