Vegan Baked Ziti

2 Cans of 28oz Organic Diced Tomatoes

1 Medium Onion

Ingredients
Vegan Ricotta

1 Cup Cashews
-
1 Lemon
-
1/4 tsp Sea Salt

1 tsp Garlic Powder
-
1/2 tsp Onion Powder
-
1/4 tsp Black Pepper
Other Ingredients

1 lb Penne Pasta
-
1/2 Bag Daiya Mozzarella Cheese
Ziti Mix
-
Ricotta mix
-
1 tsp Basil
-
1 tsp Oregano
-
1 tsp Parsley
-
1/2 tsp Onion Powder
-
1/2 tsp Garlic Powder
-
1/2 Bag Daiya Mozzarella Cheese

1 Follow Your Heart Vegan Egg
Directions
Prep Sauce
-
Dice up onion into small pieces
-
Thinly cut garlic
-
Add olive oil covering bottom of pan
-
Saute garlic until golden brown
-
Add onions and cut for about 5 minutes covered
-
Add 2 cans of diced tomatoes
-
Cook sauce for 2.5 hours
-
Add sea salt, basil, pepper and cook another 10 minutes

Blend sauce in Vitamix
Prep Ricotta
-
Soak cashews in water for 2 hours
-
Add all Ricotta ingredients to Cuisinart and blend until creamy
Prep Ziti Mix
-
Add to bowl Ricotta mix, oregano, parsley, onion powder, garlic power, Daiya cheese, Vegan Egg and mix together
Vegan Baked Ziti

Boil Pasta for 10-12 minutes until al dente
-
Drain pasta and add in some sauce to keep it from sticking together

Mix in the Ziti mix prepared above.

Add Pasta / Ziti mix to CorningWare dish
-
Add sauce over the top of the pasta
-
Sprinkle the other 1/2 of Daiya Mozzarella Cheese over the sauce
-
Cook in oven at 375 degrees for 25-30 minutes and for the last 2-3 minutes put oven on broil until golden brown

Ready to serve the dish enjoy!
